Tasting Notes & Pairings

Taste it like the miller does

Pour a little into a small glass, cup it in your hand to warm it, swirl, and breathe in. Sip and let it coat your mouth. You’re looking for three things: fruity (fresh-cut grass, green olive), bitter (a clean edge), and pungent (that peppery finish). All three are signs of a living, high-quality oil.

Pairings by oil

  • Organic Flagship EVOO — raw and finishing: white beans, grilled bread, tomatoes, fish.
  • Classic EVOO — everyday cooking, roasting vegetables, dressings.
  • ETRURIUM Tuscan IGP — steak, hearty soups, bruschetta, aged cheese.
  • Any of them — the truest test: good bread, a little salt, and the oil. Nothing else.
