They both say &#8220;extra virgin.&#8221; They are both green-gold. The honest answer is not marketing \u2014 it is arithmetic. Real extra virgin olive oil is expensive to make, and every corner that can be cut to lower the price changes what ends up in the bottle.<\/p>\n\n<h2 class=\"wp-block-heading\">It starts with a stubborn tree<\/h2>\n\n<p class=\"wp-block-paragraph\">An olive tree is not a factory. It yields modestly, it alternates heavy and light years, and it grows best on hillsides that resist machines. On a terraced grove like ours in Calabria, much of the harvest still comes down to human hands, nets, and ladders \u2014 crews working tree by tree through a window of a few short weeks. Labor is the single largest cost in a bottle of genuine estate oil, and there is no honest way around it.<\/p>\n\n<h2 class=\"wp-block-heading\">Early harvest: paying more for less oil<\/h2>\n\n<p class=\"wp-block-paragraph\">Here is the economic decision that separates serious producers from the rest. Olives picked early \u2014 green, dense with polyphenols \u2014 give dramatically less oil per kilo than fully ripe fruit. A producer chasing yield lets the olives hang and darken; the volume goes up, and the character and antioxidants go down. Fruit that waits ferments; oil pressed from tired fruit is flat and defective. Pressing within hours means running the mill during harvest at whatever hour the fruit arrives, keeping the paste cold, and accepting slower, gentler extraction that leaves oil behind in the pomace. Industrial operations solve this with scale, heat, and time \u2014 all of which raise yield and quietly lower quality.<\/p>\n\n<h2 class=\"wp-block-heading\">What the cheap bottle is not telling you<\/h2>\n\n<p class=\"wp-block-paragraph\">When a liter of &#8220;extra virgin&#8221; costs less than a sandwich, the savings had to come from somewhere. Usually it is some combination of late-harvest fruit, bulk oil blended from multiple countries, older stock mixed with new, and in the worst cases oil that does not merit the grade on the label at all \u2014 a University of California, Davis study famously found that a majority of tested imported &#8220;extra virgin&#8221; samples failed the standard.
