Olive oil is one of the most adulterated foods in the world \u2014 and once you know what to look for, the fakes are easy to spot.<\/p><h2 class=\"wp-block-heading\">The uncomfortable truth about \u201cextra virgin\u201d<\/h2><p class=\"wp-block-paragraph\">In a landmark University of California, Davis study, the majority of imported \u201cextra virgin\u201d olive oils tested failed to meet extra-virgin standards. Some were watered down with cheaper oils; others were old, oxidized, or simply mislabeled. \u201cExtra virgin\u201d is a legal grade \u2014 but enforcement is thin, and plenty of oil that clears the label tastes like nothing at all.<\/p><h2 class=\"wp-block-heading\">7 signs your olive oil might be fake<\/h2><h3 class=\"wp-block-heading\">1. There\u2019s no harvest date<\/h3><p class=\"wp-block-paragraph\">Real olive oil is a fresh juice with a season. If the label shows only a \u201cbest by\u201d date and never a harvest date, the producer is hiding how old it is.<\/p><h3 class=\"wp-block-heading\">2. You can\u2019t trace the origin<\/h3><p class=\"wp-block-paragraph\">\u201cImported from Italy\u201d or \u201cbottled in Italy\u201d is not the same as grown in Italy. Great oil names a single estate or region. If the origin is vague, it\u2019s usually a blend of anonymous oils from several countries.<\/p><h3 class=\"wp-block-heading\">3. It\u2019s suspiciously cheap<\/h3><p class=\"wp-block-paragraph\">Hand-harvesting, low yields, and cold pressing cost money. If a large bottle costs less than a sandwich, something was cut \u2014 usually quality.<\/p><h3 class=\"wp-block-heading\">4. It tastes like nothing<\/h3><p class=\"wp-block-paragraph\">Good extra virgin olive oil is fruity, a little bitter, and peppery enough to catch the back of your throat. That pepper is polyphenols \u2014 antioxidants. Flat, greasy, buttery oil with no bite has usually lost (or never had) them.<\/p><h3 class=\"wp-block-heading\">5. It\u2019s sold in clear glass under bright light<\/h3><p class=\"wp-block-paragraph\">Light degrades oil fast. Serious producers use dark glass or tins and protect it. A clear bottle baking under supermarket lights is a bad sign.<\/p><h3 class=\"wp-block-heading\">6. There\u2019s no acidity figure<\/h3><p class=\"wp-block-paragraph\">Free acidity is the clearest measure of quality \u2014 real extra virgin sits well below 0.8%, and the best runs far lower. If it\u2019s not on the label, ask why.<\/p><h3 class=\"wp-block-heading\">7. There\u2019s no lot number or story<\/h3><p class=\"wp-block-paragraph\">Traceability is design.
