Hand harvesting that protects both the fruit and the tree. Low-water, low-energy extraction that produces less waste and a cleaner oil.<\/p><h2 class=\"wp-block-heading\">Why it shows up in the bottle<\/h2><p class=\"wp-block-paragraph\">Cleaner growing means a purer oil \u2014 higher in the antioxidants that make olive oil worth eating, and free of the residues you&#8217;d rather not.
