Fortunately, olive oil is one of the few foods whose quality can be pinned to specific, measurable chemistry. Two laboratory numbers in particular, free acidity and peroxide value, sit at the heart of how the grade extra virgin is defined and defended. Understanding them, and the process of rancidity they guard against, is the surest way to read an oil honestly.<\/p>\n\n<h2 class=\"wp-block-heading\">Free fatty acid acidity: the defining number<\/h2>\n\n<p class=\"wp-block-paragraph\">The fatty acids in olive oil are normally bound up in triglycerides. When the fruit is damaged, over-ripe, poorly stored, or slow to reach the mill, enzymes and microbes begin to cleave those bonds, releasing individual fatty acids into the oil. The proportion of these liberated fatty acids is the free acidity, expressed by convention as a percentage of oleic acid by weight. It is important to be clear about what this is not: it has nothing to do with sourness or the acidity you taste, and you cannot detect it by palate. It is a chemical index of how much the oil&#8217;s structure has already broken down.<\/p>\n\n<p class=\"wp-block-paragraph\">This is why free acidity is the single defining threshold for the top grade. Under the standards of the International Olive Council and European Union regulation, an oil may only be called extra virgin if its free acidity is no greater than 0.8 grams per 100 grams, that is, 0.8 percent. Virgin olive oil is allowed up to 2.0 percent; above that, the oil is not fit to be sold as virgin at all. A low figure indicates sound fruit, handled quickly and cleanly. When fats react with oxygen, the first stable products are hydroperoxides, and the peroxide value quantifies them, reported in milliequivalents of active oxygen per kilogram of oil. For extra virgin olive oil the regulatory limit is 20 milliequivalents per kilogram. A rising peroxide value is the early chemical signature of oxidation: the oil has begun to react with air, even if it has not yet developed an obvious off-flavour.<\/p>\n\n<p class=\"wp-block-paragraph\">Peroxides are intermediates rather than endpoints. As oxidation proceeds, they break down into the aldehydes, ketones, and short-chain acids that the nose registers as rancidity. This is why a genuinely fresh oil should have a low peroxide value, and why the number, taken together with free acidity, gives a fuller picture than either alone.<\/p>\n\n<h2 class=\"wp-block-heading\">What actually makes oil go rancid<\/h2>\n\n<p class=\"wp-block-paragraph\">Rancidity in olive oil is chiefly oxidative: a chain reaction in which oxygen attacks the double bonds of unsaturated fatty acids, generating free radicals that propagate further damage. Four factors accelerate it, and they are worth naming precisely because each one is controllable.<\/p>\n\n<ul class=\"wp-block-list\"><li><strong>Light<\/strong>, especially ultraviolet, supplies the energy that initiates oxidation and destroys protective pigments and antioxidants.<\/li><li><strong>Heat<\/strong> raises the rate of every reaction involved; a bottle stored beside the stove ages far faster than one kept cool.<\/li><li><strong>Oxygen<\/strong> is the reactant itself; the more air contacting the oil, the more oxidation proceeds, which is why headspace in a half-empty bottle matters.<\/li><li><strong>Time<\/strong> allows the reactions to accumulate; even a perfectly stored oil is not immortal.<\/li><\/ul>\n\n<p class=\"wp-block-paragraph\">The oil is not defenceless. Its natural polyphenols and vitamin E act as antioxidants, sacrificing themselves to interrupt the radical chain. This is the direct link between the compounds discussed in our page on <a href=\"https:\/\/olivefather.com\/?page_id=20\">polyphenols<\/a> and the shelf life of the bottle: a phenol-rich oil has a larger reserve of protection and stays fresh longer.<\/p>\n\n<h2 class=\"wp-block-heading\">Why the bottle and the date matter<\/h2>\n\n<p class=\"wp-block-paragraph\">If light, heat, oxygen, and time are the enemies, good packaging is simply the practice of excluding them. Dark glass and opaque tins block the light that clear bottles let through; this is not decoration but function. A harvest date, printed alongside or instead of a distant &#8220;best before&#8221;, tells you what a shelf-life stamp cannot: how old the oil truly is. Olive oil does not improve with age the way wine can. It is at its best young, and a harvest within the last season is a meaningful signal of freshness. But that residual moisture and sediment can shelter enzymes and encourage sediment-driven spoilage over time, so unfiltered oils tend to have a shorter practical life and must be used promptly. Filtration removes those particles and water, producing a clearer oil that is generally more stable in storage. Neither is inherently superior; the choice is a genuine trade-off between the immediacy of the unfiltered style and the longevity of the filtered one.<\/p>\n\n<h2 class=\"wp-block-heading\">The smoke point myth<\/h2>\n\n<p class=\"wp-block-paragraph\">A persistent piece of kitchen folklore holds that extra virgin olive oil is unsuitable for cooking because of its smoke point. The claim does not survive scrutiny. The smoke point of a good extra virgin oil generally sits comfortably above the temperatures of most everyday cooking, including sauteing and shallow frying, and it is a poor predictor of how a fat behaves when heated in any case.<\/p>\n\n<p class=\"wp-block-paragraph\">What actually matters is oxidative stability: how much harmful degradation a fat undergoes at cooking temperatures over time. Here olive oil&#8217;s chemistry works in its favour. Its high proportion of monounsaturated oleic acid and low level of fragile polyunsaturates make it intrinsically resistant to oxidation, and its load of natural antioxidants slows degradation further. Controlled cooking studies have repeatedly found extra virgin olive oil to be among the more stable oils under heat, producing fewer harmful oxidation products than many seed oils with nominally higher smoke points. The honest summary is that a fresh extra virgin oil is not merely acceptable for cooking but is, by the measure that counts, one of the better choices.<\/p>\n\n<h2 class=\"wp-block-heading\">Quality you can verify<\/h2>\n\n<p class=\"wp-block-paragraph\">The virtue of olive oil chemistry is that it turns vague claims into checkable facts. Free acidity below 0.8 percent and a low peroxide value define the extra virgin grade; dark packaging, a recent harvest date, and sensible storage protect that quality on the shelf; and the oil&#8217;s own composition makes it more robust in the pan than its reputation suggests.
